Grilling season is upon us, and I’m so excited. I love cooking with my friends and family outdoors. But I also love to experiment in the kitchen, so when it comes to grilling season, I like to throw together some of my favorite recipes—and these are some of my absolute favorites!

1. Grilled Chicken Kabobs

Preparing the grill:

  • Prepare a gas or charcoal grill to medium-high heat.
  • Cut the chicken into 1″ cubes and place in a bowl. Add olive oil and garlic, plus salt and pepper to taste. Toss gently until all of the chicken is coated with olive oil.

Coconut Whipped Cream: In a small bowl using an electric mixer beat heavy cream until soft peaks form; add sugar and vanilla extract beating until stiff peaks form; fold in toasted coconut flakes just before serving over grilled peaches. Serve immediately topped with grated dark chocolate if desired!

This shrimp and vegetable dish is so easy to make, it’s practically foolproof. The flavor combination of the tangy balsamic vinegar and sweet honey is delicious, and the vegetables add a nice texture to the dish.

6. Easy Grilled Meatloaf Sliders

Make sure your meatloaf is fully cooked. Meatloaf should always be fully cooked before serving. To check, use a meat thermometer to make sure the center of your loaf has reached an internal temperature of 160 degrees Fahrenheit.

Use a meatloaf pan to bake it in and grill it on top of charcoal briquettes or hardwood chunks. If you don’t have a grill that can accommodate cooking on top of charcoal briquettes or hardwood chunks (this is ideal), simply place your meatloaf pan directly on the grates and bake it in there until done!

7. Grilled Pork Chops With Crunchy Blueberry Salsa

Preparing the salsa ahead of time can make your life so much easier, and it will also allow you to focus on grilling the pork chops.

When you are grilling the pork chops, be sure to use a grill basket to keep them together. This will help them cook evenly and prevent them from falling through the grate of your grill or oven. If they are really thick, don’t worry; they will still taste delicious! 

Cook them until they reach an internal temperature of at least 145°F and no more than 160°F before removing them from the heat source (it is recommended that you check with a meat thermometer).

8. Spanish Chicken Skewers

  • 1 pound chicken thighs, boneless and skinless
  • 2 red bell peppers, cut into pieces
  • 1 onion, cut into pieces
  • Handful of cilantro leaves (optional)
  • 3 large cloves garlic, minced or pressed through a garlic press
  • Olive oil for brushing the skewers (or use cooking spray)
  • Salt and freshly ground black pepper to taste

9. Classic Skillet Mac & Cheese (Right On The Barbecue!)

The first step to perfecting this recipe is getting the right tools. You’ll need a cast iron skillet, which can be found at any kitchen supply store or online. 

Cast iron skillets are ideal for cooking on the grill because they retain heat so well, making sure that the cheese doesn’t burn before it has time to fully melt and become creamy. If you don’t happen to have one laying around already, I recommend ordering one from Amazon (they’re only about $20).

Once you have your trusty cast iron skillet in hand and ready for grilling duty, start by preheating your grill on medium-high heat about 350 degrees Fahrenheit or 180 degrees Celsius—for 15 minutes or so.

While you’re waiting for it to warm up, mix together some flour with water until it forms a thin paste; set aside for later use when baking off your macaroni noodles (don’t worry about mixing too much into the batter it’s just what gives them crispy edges).

10. Perfectly-Grilled Corn On The Cob In A Husk
